Fuel up for a busy day afield with these easy and hearty breakfast sandwiches.

This is a great camp recipe if you have an oven or a dutch oven handy. The recipe starts by pre-cooking the eggs. To keep them nice and round and make them fit easily inside the sandwich, I like to cook them in a muffin pan. Simply hit each cup with some non-stick cooking spray, then crack an egg into them. One egg per muffin cup. Place the eggs into a pre-heated 350 degree oven and cook just until they set up. This batch took about six to seven minutes. If you want your yolk slightly runny in the finished product, pull the eggs as soon as the white sets up enough to hold together. They will cook a bit more while the sandwiches bake.

Pre-bake your eggs in a muffin pan to make them fit inside the stuffed sandwich.

To assemble the sandwich, start with jumbo sized canned biscuits. Go ahead and give them a good whop on the counter to burst open the can. That’s the most satisfying part of a canned biscuit.

Pop open the canned biscuits and place one on your floured work surface.

Lightly flour your work surface. Place one biscuit on the floured surface and press it down with a rolling pin or the palm of your hand.

Layer on the Canadian bacon, egg and a slice of cheese.

Once the biscuit is about half as tall as it was and nearly twice as wide, place a slice or two of Canadian bacon onto the center. Top that with one of your baked eggs, then some cheddar cheese. Repeat the flattening process with a second biscuit. Cover the fillings with the second biscuit and use your fingers to seal the edges of the two biscuits together to hold in the filling.

Move the assembled stuffed biscuit to a lightly greased baking pan or iron skillet. Repeat the process with the remaining biscuits. An eight-pack can of biscuits should give you four sandwiches.

Once all the sandwiches are assembled, return the pan to the oven set at 375 degrees. Bake 8 to 10 minutes or until the biscuits are golden and flaky.

These make the perfect pre-hunt breakfast. Sometimes I’ll transfer them directly from the hot pan to a sheet of aluminum foil and wrap them up tightly. Slip one of these in your pack or jacket pocket and enjoy it on the deer stand or in the duck blind.
