Chicken and Waffles has long been a favorite. This version combines spicy bites of fried wild turkey breast with waffles and cheddar cheese, into a casserole that is both creamy and crunchy, spicy and sweet.

Drizzle real maple syrup over the piping hot casserole just before serving.

You can make your waffles fresh, or save a bit of time by buying frozen Belgian style waffles. Either way, the casserole will be a sure hit with the entire family.

Ingredients

1 side of a wild turkey breast, cut into bite-sized pieces

12 Belgian waffles, cut or torn into pieces

8 eggs, beaten

1 cup milk

1/2 cup real maple syrup (we use syrup from The Pileated Forest)

oil for deep frying

1 cup shredded cheddar cheese

Dredge for turkey

2 cups flour

3 tablespoons Cajun seasoning

1 teaspoon cayenne pepper

1 teaspoon salt

1 teaspoon black pepper

Cooking Instructions

Begin by dredging the turkey nuggets in the seasoned flour.

Cut the turkey breast into bite-sized pieces.

Beat the eggs, milk and maple syrup. Set aside.

Add a layer of waffles to the bottom of a buttered baking sheet. Sprinkle with half the cheese. Add the remaining waffles, turkey and cheese. Pour the milk, egg, and syrup mixture over the dish. Place the pan in a 350 degree, preheated oven for 45 minutes, or until center is set.

Pour over the egg mixture to soak into the waffles.

To serve, scoop the serving onto a plate, then drizzle with additional maple syrup.
