Need a quick and easy meal to make with your wild turkey? This one is delicious, simple, and it will fill you up. Everyone loves this dish around our home and hunt camps.

This simple one-skillet meal combines smoked alligator sausage with tender wild turkey. Images by author

Smoked sausage and skillet browned wild turkey work well together. Add in potatoes, and it becomes a full meal. Toss in some peppers, garlic, and a little cheese, and it becomes a comfort food classic.

After a recent trip to the butcher shops of south Louisiana, I use sausage made from a blend of alligator and pork. Don’t have alligator sausage handy? Just use your favorite smoked pork sausage.

Use your favorite smoked sausage, alligator or not.

Start by cubing the red potatoes. I like about a half-inch size for this one. Once the potatoes are ready, set them aside.

In a large skillet over medium heat, brown the sausage.

Once it starts to take on some color and render out some fat, add the wild turkey breast. Season with a salt / pepper / garlic blend. Once the turkey and sausage are cooked through, remove them from the skillet.

Add the wild turkey and cook it through.

Unless your sausage had a lot of fat in it, you need to add some to the skillet at this point. For an extra layer of flavor, I love duck fat or bacon fat in this recipe. If you don’t have either handy in your fridge (you should), vegetable oil will do.

Remove the meat from the pan and cook the potatoes until they are crispy on the outside and soft in the middle.

Add the potatoes and season with the SPG blend. Brown, stirring occasionally, until the potato cubes are soft in the center and crispy brown on the outer surface. Return the sausage and turkey and stir to combine. Add the peppers and garlic. Turn off the heat and stir well.

Return the sausage and turkey to the cooked potatoes.

Add the cheese. Let’s talk about that. We’re all friends here. When you see an amount listed in a recipe for either cheese or butter, know that it is merely a suggested starting point. Add that stuff until your heart is happy.

Add the cheese and peppers. Stir well.

Stir everything well to blend in the melted cheese and serve piping hot. Total cook time on this one is under 30 minutes and it only requires a knife, cutting board and one skillet, so cleanup is a breeze. Add a side salad and you have the perfect busy weeknight meal.
