Sometimes you just need something rich and creamy for dinner, maybe spooned over some mashed potatoes for the full effect. This squirrel recipe fits the bill perfectly.

You can adjust cooking time to as long as it takes to make the squirrel tender, but young squirrels help make the recipe cook faster.

Start by mixing the Italian seasoning, salt and pepper into the flour. Dredge the squirrel pieces well on all sides.

Dredge the squirrel in the seasoned flour.

Heat the oil and one tablespoon of butter in a large skillet. Brown the squirrel well on all sides.

Start by frying the squirrel in a mixture of oil and butter.

Remove the squirrel from the pan and set it aside.

Brown the squirrel then set it aside.

Peel the garlic cloves and lightly crush them with the side of your knife.

Sauté the garlic until softened.

Pour in the chicken stock. Bring to a light boil. Add the garlic powder and heavy cream. Scrape up any stuck on bits from the bottom of the skillet.

Return the squirrel to the pot.

Add stock and return the squirrel to the pan.

Reduce the heat to maintain a low simmer. Add the remaining butter.

Cover the pan and simmer for 30 to 60 minutes or until the squirrel is tender. Serve over mashed potatoes.
