We usually end up with several pounds of trim when we butcher our wild hogs. The best answer for those is the grinder. You can make sausage out of the ground meat, but dishes like this are also an excellent way to use it.

This one is another Asian/Mexican fusion style recipe. It combines the flavorful filling from traditional steamed or fried pork dumplings with the ease of eating and crunchy toppings of a street taco. Start by dicing some green onions. Go ahead and chop a few extra. They make great toppings for the finished taco.

Dice the green onions.

Mix the ground pork with the vinegar, soy sauce, hot sauce, green onion, garlic, ginger, and salt.

Mix the meat with the seasonings.

Once you have the filling mixture blended, smear a rounded tablespoon onto the center of a tortilla. Use the back of your spoon to flatten the meat and spread it evenly over the tortilla, right up to the edge.

Spread a large spoonful of filling over the tortilla.

Set the filled tortilla aside and repeat the process until you have used all of the filling.

Heat a large cast iron or non-stick skillet over medium heat. Once the pan is hot, place two to three of the tortillas, meat side down, into the skillet. Take care not to overcrowd the pan. You don’t want the tortillas to overlap. Use the back of a heavy spatula or a burger press to press down on the tortillas, searing the filling mixture on the hot surface.

Cook for two to three minutes or until the meat is crispy on the edges and cooked through.

Flip the tortillas and continue cooking until the bottom is crisp and golden. Move to a warm platter and repeat until all the tacos are cooked.

Top each warm taco with a sprinkle of cole slaw mix from the grocery, or you can slice your own cabbage and carrots. Add additional green onion, if desired. Serve with your favorite dumpling dipping sauce or top with ponzu, the popular citrus and soy-based Japanese condiment.
