Any time we kill a few squirrels, I stash away the front legs for this recipe.

Package the front legs separately each time you clean squirrels and save them for recipes like this.

Toss them in the bourbon honey coating as soon as they come out of the deep fryer. Yea, there isn’t a lot of meat on a squirrel front leg, but what there is makes a tasty snack.

In a small saucepan, heat the sauce ingredients to a light simmer. Stir well. Maintain a simmer while you fry the squirrel legs.

Toss the squirrel legs in the seasoned flour and set aside for 10 minutes to allow the crust to set on the meat.

Heat vegetable or peanut oil in a deep fryer or dutch oven to 350 degrees. Fry the legs in batches, about 7-10 minutes per batch.

Remove the squirrel legs and allow the oil to drain back into the pan.

Drizzle the sauce over the cooked legs and toss to coat well.

Place the legs in a large bowl with a lid and toss with the sauce before serving.
