I love a good sub sandwich piled-high with salami, pepperoni, prosciutto, cheese, lettuce, tomato and dressing on good bread. But sliced, marinated, and grilled backstrap makes it even better.

Add grilled marinated backstrap to a traditional Italian sub to kick up the flavor of a classic sandwich. All images by Michael Pendley

To start, we marinate a backstrap roast overnight in zesty Italian salad dressing. Just put the backstrap roast in a zip style bag and pour over your favorite brand of dressing.

Add the backstrap to a zip style bag, pour in dressing, and then refrigerate.

When you are ready to build your sandwich, fire up your Pitboss Grill to 350 degree. While it pre-heats, build the base of your sandwich. I like French, Italian, or sourdough bread. Slice the bread open and add the sliced meat of your choice. I usually use pepperoni, salami, and prosciutto, but you can use ham, turkey or whatever you like.

Use your favorite cold cuts like pepperoni, salami, prosciutto or ham.

Top the meat with provolone cheese.

Add the cheese to the sandwich before grilling.

Once the grill is hot, cook the backstrap for about 5 minutes per side. When you open the grill to flip it, put the sandwich on the upper rack and top it off. This will heat the meat through, toast the bread, and melt the cheese.

Grill the backstrap to medium rare and the sandwich until the meat has heated through and the bread is toasted.

When the backstrap reaches about 125 degrees internally, pull it from the grill and allow it to rest. Go ahead and remove the sandwich.

Pull the backstrap and rest a few minutes before slicing.

Slice the rested backstrap into thin medallions.

Slice the blackstrap against the grain for tenderness.

Layer the backstrap over the melted cheese on the sandwich.

Layer on the backstrap over the grilled sandwich.

Top with shredded lettuce, sliced tomato, and whatever sub dressing you prefer. Slice the sandwich into serving sizes.

Add your favorite sub dressing to the sandwich and slice into serving sized pieces.
