It’s hard to find any problems with a good loaded baked potato. And everyone loves venison tacos. This recipe combines the two into a quick and easy meal that you can have on the table in no time and that your entire family will love.

Load up a large baked potato with all your favorite taco seasonings and lots of queso cheese for an easy meal that will have everyone asking for more. All images by author

Start with the potatoes. You can bake them or, if you are in a hurry, pop them in the microwave, but my favorite way to make a baked potato these days is in the air fryer. The time comes in somewhere between the regular oven and the microwave at about 45 minutes and the results are a crispy skin and puffy interior that creates the perfect vessel for your taco fixins.

Just rinse two or three large potatoes and poke them a few times with a fork. Lightly coat the skin with olive or vegetable oil, then salt and pepper well. Place the potatoes in your air fryer basket, leaving a little space between, and cook at 400 for 30 minutes. Flip the potatoes and give them another 10 minutes if they need it.

Cook your ground venison with your favorite taco seasoning and green chiles.

While the potatoes bake, cook one pound of ground venison (or ground turkey legs, which also work great for this recipe). Add a packet of your favorite taco seasoning, or make your own if you have the time, four ounces of chopped green chile peppers for extra flavor, and just enough water to make everything moist. While that simmers, make your own cheese sauce or heat up your favorite store bought queso or nacho cheese.

Top the potato with plenty of venison taco meat.

To serve, split the potato, spoon on some ground venison, then top with queso.

Add salsa, chopped chives, a little shredded lettuce if you like, and a dollop of sour cream.

Serve with salsa, sour cream, extra cheese and anything else your guests would like to have on their potato.

Now that’s a meal perfect for a busy weeknight dinner.
