If you used this recipe to smoke a wild pig shoulder, you might have a bit of leftover meat. This fried rice recipe is the perfect way to incorporate it into a full meal.

Besides the pork, I like to use some Realtree smoked sausage from Uncle John’s Pride with this one. Use your favorite brand, any smoked sausage will work.
Use Realtree brand smoked sausage or choose whatever is available in your area.
To add a bit of sweetness to counter the pork, and to give the finished dish a Polynesian flavor, I like to use some fresh pineapple and some teriyaki sauce. That blend of savory, sweet and salty is perfect.
Anytime you make fried rice, use day old rice that you cooked and refrigerated. I’m sure there is a science behind why it works better than freshly cooked rice, but there is no doubt that it does. Any standard medium or long grain white rice is fine; just cook it the day or two before and stash it in the refrigerator until you are ready to make this dish.
Day old refrigerated rice is always the best choice for fried rice. The texture is much better than using freshly cooked rice.
I like to cook this one on my Camp Chef Griddle. The large surface area lets me cook the individual components at the same time, then blend and finish. Since it is cooked on a griddle, this makes this one a perfect choice for camp.
Start with the onions and smoked sausage on a lightly oiled griddle.
Start with the diced onions and sliced sausage together on the griddle.
Once they are going, scoot them over to one side and add the pork to the hot griddle to start heating through.
Add the leftover pulled pork to start heating through.
On another part of the griddle, start the peas and carrots together. If you are short on time, you can find frozen peas and carrots together at the grocery. It’s perfect for this one.
Add the peas, pineapple, and carrots to the griddle.
Crack a couple eggs in the center of the griddle and scramble. Good fried rice has to include some egg. Now drop the cooked rice onto he griddle and incorporate the egg until it is well blended throughout the rice.
Cook the egg then blend it into the rice.
Move over your cooked sausage and onion, then add in the pork. Fold in the peas and carrots and continue cooking while you blend everything together.
Blend everything together and season to taste.
Season with Realtree APX and pour over your teriyaki sauce, folding everything well to blend. Serve it up straight off the griddle if you are in camp to cut down on dishes.

4 cups precooked rice, day old is best
2 eggs
1 onion, chopped
1 cup frozen peas
1 cup diced carrots
1 cup pineapple, cut into bite-sized pieces
1 cup teriyaki sauce
1 tablespoon Realtree APX all-purpose seasoning
